One of my favorite holiday traditions is the special rice pudding we enjoy on Christmas eve—a creamy, comforting Icelandic classic that brings our family together around the table, sharing warmth and joy.

Ingredients
  • 1 cup short-grain rice or porridge rice (arborio or sushi rice work well too)
  • 4 cups whole milk (plus a little extra for serving)
  • 1 cup water
  • 1 tsp salt
  • 1 cinnamon stick
  • 2 tbsp sugar
  • 1 tbsp butter

Toppings:

  • Cinnamon sugar (a mix of 1 part cinnamon to 4 parts sugar)
  • Butter for melting on top (for a traditional Nordic touch)
  • Golden raisins, nuts or muesli
How to Make It
  1. In a large saucepan, bring the water and salt to a boil. Add the rice, reduce the heat, then pour in the milk and add the cinnamon stick.
  2. Simmer gently over low heat, stirring often to prevent sticking, until the mixture becomes creamy and the rice is tender—about 40 minutes.
  3. Stir in the sugar and butter, cover, and let the pudding rest for 10 minutes so it thickens and the flavors develop.
  4. Serve warm. Spoon into bowls and finish with a generous sprinkle of cinnamon sugar.
  5. For extra Christmas coziness, top with a small pat of butter, golden raisins, chopped nuts, or a splash of milk.

Icelandic Christmas tradition:

Hide a single almond in the pot before serving. Whoever finds it wins a small gift—chocolate, a puzzle or board game. It’s a playful treat and beloved in Icelandic homes.
