Home Alone Collagen Omelet

Omelette with avocado slices on top
This is what I make when I’m home by myself and I don't want to spend too much time cooking. It’s healthy, filling, and easy to make. Eggs are so versatile, and avocado is so creamy you can’t go wrong, especially when you make it even healthier by adding some of my collagen.

Ingredients
  • 2 large eggs
  • ½ avocado, sliced
  • 5 cherry tomatoes, cut in half
  • 2 slices cheese (I use Muenster cheese)
  • 2 slices turkey or ham
  • 1 tbsp caramelized onions
  • 1 tsp butter or 1 tbsp olive oil
  • 1 scoop (1 serving) just björn marine collagen
  • Salt and pepper to taste
How to Make It
  1. Crack the eggs in a small bowl, add the collagen and whisk together (I like to whisk them with a few drops of heavy cream - don’t tell anyone:-)
  2. Heat up a large skillet to high and add butter or olive oil
  3. Add the eggs onto the hot pan and cook the egg by letting it run all over the pan, pushing the cooked egg towards the middle and letting the uncooked run to the edges. This should take less than a minute. Just don’t overcook (burn) the eggs.
  4. Turn off the pan and place the cheese and turkey breast on the cooked omelet and fold into an “envelope”
  5. Place the omelet on a plate, top with sliced avocado, cherry tomatoes, and caramelized onions.
  6. Salt and pepper to taste
