YIELD: 20 Coconut Oat Bites
Ingredients
- 2¾ cups old-fashioned rolled oats
- 1¼ cups packed Medjool dates, pitted (about 12–14 large dates)
- 3 tbsp unsweetened cocoa powder
- 2 tbsp strong coffee or espresso
- 1 tsp vanilla extract
- ¼ tsp sea salt
- 2 tablespoons coconut oil, melted (or unsalted butter)
- 2 scoops just björn Marine collagen
- 1-1½ cups unsweetened shredded coconut, for coating
How to Make It
- If the dates are firm, soak them in warm water for 10 minutes and drain.
- Add dates, coffee, vanilla, coconut oil, and sea salt to a food processor. Blend until smooth.
- Add oats, collagen and cocoa powder and pulse until the mixture comes together.
- If the mixture is too dry, add 1 teaspoon coffee or water at a time. If too wet, add a few extra tablespoons of oats.
- Refrigerate for 30 minutes.
- Roll into 1-inch balls.
- Coat generously in shredded coconut.
- Chill for at least 30 minutes before serving.
- Store in an airtight container in refrigerator.
