Muesli
- 3½ cups rolled oats
- ½ tsp sea salt
- ½ tsp ground cinnamon
- ½ cup sliced almonds
- ½ cup pecans, roughly chopped
- ½ cup pumpkin seeds
- ½ cup coconut flakes
- ½ cup dried cranberries
To Serve
- 1 cup Skyr (Icelandic style yogurt)
- Homemade muesli
- 1 scoop just björn marine collagen
- ½ cup of fresh berries
- 1 tsp honey or agave syrup (optional)
- Preheat oven to 350°F
- In a large bowl, combine oats, almonds, pumpkin seeds, pecans, cinnamon, and sea salt. Mix all the ingredients well and spread evenly on a baking tray.
- Bake in the oven for 10 minutes
- Remove the tray, stir the mixture, add the coconut flakes and return to the oven and baking for about 4-5 minutes, or until the coconut flakes are lightly golden.
- Remove from the oven and let cool.
- Once cool, mix in the cranberries and store the muesli in a large jar
To serve, add one cup of your favorite skyr or yogurt and one scoop of just björn collagen to a serving bowl and mix well until blended.
Add the desired amount of muesli on top of the Skyr as well as fresh blueberries, strawberries, or any berries you like. For added sweetness, you can add a tsp of honey or agave syrup to taste.
