My love of avocados is no secret, and avocado toast is one of my favorite ways to enjoy them. You can top the toast with almost anything, creating savory and satisfying flavor profiles. Here are three different combinations that you can enjoy for breakfast, brunch or even lunch. I encourage you to try these out and get creative with your toppings.
Roasted Tomato and Herb Avocado Toast

Ingredients
- 1 Hass avocado
- 2 slices sourdough bread
- ½ cup of grape tomatoes
- 1 tbsp olive oil
- 1 tbsp chopped fresh basil
- 1 tbsp chopped fresh chives
- Salt and pepper to taste
How to Make It
- Preheat the oven to 350º F. Place the grape tomatoes on a baking sheet, drizzle with olive oil and season with salt and pepper to taste. Roast for 15 - 20 minutes or until tender and blistered.
- Cut the avocado in half, remove the pit, scoop the inside into a bowl and mash with a fork
- Toast the sourdough
- Spread the mashed avocado evenly on each slice of bread and season with salt and pepper
- Top with roasted tomatoes and freshly chopped herbs
Everything’s Sunny Avocado Toast

Ingredients
- 1 Hass avocado
- 2 slices of multigrain bread
- 2 eggs
- Everything bagel seasoning
- Salt and pepper to taste
How to Make It
- Cut the avocado in half, remove the pit, scoop the inside into a bowl and mash with a fork
- Toast the multigrain bread
- Spread the mashed avocado evenly on each slice of bread and season with salt and pepper
- Heat a non-stick skillet to medium heat, crack each egg into the hot skillet, being careful not to break the yolk. Cook for about 2 minutes until the whites are set. Cover and cook for another minute.
- Place a cooked egg on each slice of toast and season with everything bagel seasoning
Smoked Salmon Avocado Toast
