This traditional Icelandic Christmas cookie was my favorite growing up. Each year I would ask my mom to make an extra batch because I knew they would go fast. Also, we were five kids in our home and everyone loved this cookie. This sugar cookie with a chocolate center is easy to make, the dough is made in advance and stored in the refrigerator overnight until ready to bake. Hope you enjoy and happy holidays.

Ingredients
- 2 sticks + 2 tbsp butter (room temperature)
- 2/3 cup powdered sugar
- 2 cups all-purpose flour
- 36 chocolate buttons
How to Make it
- Preheat the oven to 350°F
- In a large mixing bowl, combine the butter and sugar and mix well
- Add the flour slowly, and when blended, knead the dough
- Divide the dough in half and roll into logs, not too wide. Refrigerate overnight.
- When ready to bake, cut the logs into cookies, around 1/4 inch thick
- Place cookies on an ungreased baking sheet and top each with a chocolate button
- Bake for 8-10 minutes in the oven. Cool and enjoy!
