Icelandic Spesíur Christmas Cookies
This traditional Icelandic Christmas cookie was my favorite growing up. Each year I would ask my mom to make an extra batch because I knew they would go fast. Also, we were five kids in our home and everyone loved this cookie. This sugar cookie with a chocolate center is easy to make, the dough is made in advance and stored in the refrigerator overnight until ready to bake. Hope you enjoy and happy holidays.

Ingredients
  • 2 sticks + 2 tbsp butter (room temperature)
  • 2/3 cup powdered sugar
  • 2 cups all-purpose flour
  • 36 chocolate buttons
How to Make it
  1. Preheat the oven to 350°F
  2. In a large mixing bowl, combine the butter and sugar and mix well
  3. Add the flour slowly, and when blended, knead the dough
  4. Divide the dough in half and roll into logs, not too wide. Refrigerate overnight.
  5. When ready to bake, cut the logs into cookies, around 1/4 inch thick
  6. Place cookies on an ungreased baking sheet and top each with a chocolate button
  7. Bake for 8-10 minutes in the oven. Cool and enjoy!
