- 2 tbsp olive oil
- 1 red onion, finely chopped
- 2 cloves garlic, minced
- 1 lb. ground chicken
- 2 tbsp rice vinegar - you can also use white wine vinegar
- 3 tbsp sweet teriyaki sauce - if you don’t have teriyaki sauce, use a mix of soy sauce and brown sugar
- 3 tbsp sesame ginger sauce - if you don’t have sesame ginger sauce, add more teriyaki sauce
- 2 tbsp soy sauce
- 4 tbsp sweet chili sauce
- 1 green bell pepper, diced
- 1 head romaine lettuce, rinsed
- Roughly chopped cucumber, bell pepper, tomatoes, avocado and finely sliced red onion - or choose your favorite toppings
- Chili mayo sauce - mix mayonnaise and sriracha sauce together
- Heat a large skillet to medium high
- Add oil, red onions and garlic and cook until onion is translucent, set aside
- In the same skillet turn to high heat and add the ground chicken, cook for 5-6 minutes stirring occasionally - drain any liquid that forms in the pan
- Continue cooking on med high to high, add the onion garlic mix, rice vinegar, teriyaki sauce, ginger sauce and soy sauce and stir for 2-3 minutes
- Add the green bell pepper and sweet chili sauce and stir for another 4-5 minutes
- Remove from heat and serve on top of romaine lettuce, add toppings of your choice and drizzle with chili mayo.
