Pan-Roasted Cauliflowers

This is one of my favorite side dishes. Pan roasted cauliflower with capers, pine nuts and chili mayo. If you love spice and acidic this is the dish for you. Lovely balance and super easy to make.

YIELD: 6 Servings
  • 1 head Cauliflower
  • 1 jar Capers (71 grams, 2 ½ oz)
  • 4 tbsp olive oil
  • 2 oz pine nuts
  • Chili mayo sauce - mix mayonnaise and sriracha sauce together
How to Make it
  1. Cut the Cauliflower into thin slices
  2. Heat up a large skillet to high and add olive oil
  3. Add the Cauliflower
  4. Pan-roast the Cauliflower for 10-15 minutes stirring occasionally
  5. In a separate pan, brown the pine nuts and season with salt
  6. Drain the liquid from the capers jar and add them to the Cauliflower and roast for another 2-3 minutes
  7. Plate the dish by putting chili mayo on the bottom, then the Cauliflower and sprinkle pine nuts and chili mayo on top.
