Sweet Potato Mash

Sweet potatoes are superfoods, packed with vitamins and minerals. It is easy to make, and you can make it the night before and heat it up just before serving. A delicious side dish for Thanksgiving Day or any day.

YIELD: 6 Servings
  • 3 large, sweet potatoes
  • 150gr fresh mushrooms (5 oz)
  • 1 tsp butter
  • 1 cup heavy cream
  • Salt and black pepper to taste
  • Fresh Parsley to garnish
How to Make it
  1. Boil the sweet potatoes in a large pot—lid on—for about 50 minutes or until soft
  2. Drain the water and let the potatoes cool down
  3. Remove the skin of the sweet potatoes and put in a large bowl
  4. Slice the mushrooms finely
  5. Heat up a pan to medium to high heat and add butter and mushrooms
  6. Brown the mushrooms for 4-5 minutes and set aside
  7. Add the heavy cream and mash the potatoes until you reach desired consistency
  8. Salt and pepper to taste
  9. Mix in the mushrooms and garnish with fresh chopped parsley
