Ingredients
- 3 large, sweet potatoes
- 150gr fresh mushrooms (5 oz)
- 1 tsp butter
- 1 cup heavy cream
- Salt and black pepper to taste
- Fresh Parsley to garnish
How to Make it
- Boil the sweet potatoes in a large pot—lid on—for about 50 minutes or until soft
- Drain the water and let the potatoes cool down
- Remove the skin of the sweet potatoes and put in a large bowl
- Slice the mushrooms finely
- Heat up a pan to medium to high heat and add butter and mushrooms
- Brown the mushrooms for 4-5 minutes and set aside
- Add the heavy cream and mash the potatoes until you reach desired consistency
- Salt and pepper to taste
- Mix in the mushrooms and garnish with fresh chopped parsley
