The weather is changing, and with colder temperatures we start craving something warm and cozy. Here is my recipe for pumpkin soup. Something to warm your soul next time it is cold and rainy outside. I can picture it now, Sunday afternoon, binge watching your favorite show under a soft blanket with this amazing pumpkin soup to complete the day.

Ingredients
- 2.5lb pumpkin – seeds scraped out and skin cut off. Cut into small pieces. (you can also use butternut squash)
- 1 large onion – sliced
- 4 garlic cloves
- 3 cups vegetable or chicken broth
- 1 ½ cups water
- Salt and pepper to taste
- 1 cup heavy cream
- Fresh basil for garnish
How to Make It
- Put the pumpkin pieces, sliced onion, garlic, broth and water into a pot
- Bring to a boil and let is simmer uncovered for about 15 minutes
- Remove from heat, pour into a blender and blend until smooth. Just be careful when blending. Everything is very hot.
- Season to taste with salt and pepper, add the cream and stir all together
- Ladle the soup into bowls and garnish with pepper and basil
- Serve with toasted bread
