Salmon generally cooks fast so just remember that it will continue to cook once removed from the pan and can become dry and overcooked by the time you are ready to eat.

Ingredients
- 1lb salmon, cut into 2 eight oz pieces (similar thickness)
- 8 oz sweet teriyaki sauce
- 2 cloves garlic, minced
- 1 inch piece of fresh ginger, grated
- 1 chili pepper, finely chopped (remove seeds for less heat)
How to Make it
- In a medium size bowl add the teriyaki sauce, minced garlic, grated ginger and chopped chili pepper and mix well
- Rinse salmon, pat dry, and place it into a bowl, cover with the sauce and let it marinate for 20-30 minutes
- Heat up a skillet to medium high
- Place the salmon in the hot pan and fry the salmon for 1-2 minutes on each side, depending on the thickness of the salmon pieces
- Remove the salmon from the pan and let it rest for 3-4 minutes (it's always better to undercook than overcook and you can check if it is done by pealing apart a couple of flakes in the middle)
- Enjoy with rice and/or vegetables (I had it with sautéed baby bok choy and seaweed salad)
