Honey Glazed Soy Chicken
Sweet, salty and umami. This chicken recipe is so delicious and easy to make. I'd recommend letting the chicken marinate for at least 2 hours, but even better if you can do it overnight. As the chicken is cooking, it is a good idea to check on it every now and then and keep brushing it while in the oven with that marvelous marinade. You can also pan fry this, just make sure to shake off as much marinade as you can, otherwise it is going to boil in the marinade. Have fun and let me know what you think.

Ingredients
  • 6 boneless skinless chicken thighs, cut into cubes
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup raw honey
  • 3 tbsp packed dark brown sugar
  • 2 tbsp rice vinegar
  • 1 tbsp ginger paste
  • 1 tbsp finely minced garlic
  • 2 tsp red chili paste
  • 1 tsp onion powder
  • Salt & fresh ground black pepper, to taste
  • Sesame seeds & sliced scallions, for garnish

How to Make it
  1. In a large bowl combine the cubed chicken thighs, soy sauce, honey, brown sugar, rice vinegar, ginger, garlic, red chili paste, onion powder, and salt/pepper. Use your hands (with disposable gloves) to massage the marinade into the chicken. Cover the bowl and refrigerate for 2-12 hours.
  2. Preheat the oven to 375°F. Line a large baking tray with foil or parchment paper.
  3. Transfer the chicken from the marinade (shake of the marinade but don’t discard the marinade) to the baking tray and roast for 20 minutes.
  4. Meanwhile, pour the reserved marinade into a small saucepan and bring to a gentle simmer over medium-low heat. Once simmering, reduce the heat to the lowest setting to keep warm.
  5. Every now and then, check on the chicken, turn over and brush with the marinade. After the first roast of 20 minutes, see if the chicken is done. Thighs are moist, so I'd recommend turning the chicken for the last time, brush, and roast for additional 5 minutes.
  6. Garnish chicken thighs with sesame seeds and sliced scallions. Serve this honey-soy glazed chicken immediately with white rice and your favorite vegetables. Enjoy!
