Protein Packed Collagen Waffles
It’s Saturday morning, you’ve finished your workout and now you want something good to eat that will fill you up and help build your muscles post workout—I recommend trying my go-to recipe for protein waffles. If you don’t have a waffle iron you can use this recipe to make pancakes, just adjust the amount of milk for the desired consistency. These protein packed waffles can be the star of your breakfast or be served as part of your brunch menu. For brunch, I like paring these with eggs, like my home alone collagen omelet, and bacon—I try to limit eating bacon to once a week or every other week. These waffles are also delicious with fresh fruit, maple syrup and skyr (Icelandic yogurt) for a sweet variation. Let me know what you think and what you like with your waffles.

YIELD: 4 waffles
Ingredients
  • ½ cup flour
  • ½ cup protein powder
  • 2 scoops (2 servings) just björn marine collagen
  • 1 tsp baking powder
  • 1 tbsp agave syrup
  • 1 tbsp vanilla extract
  • 2 tbsp vegetable oil
  • 1 egg
  • ½ cup milk (depending on the consistency you might want to add a little more milk)
How to Make it
  1. Heat up your waffle iron and spray with cooking spray
  2. In a bowl, add all the ingredients and whisk everything together until mixed well. The batter should be thick but a little runny
  3. With a ladle add the mixture to the waffle iron and cook until ready (waffle irons can vary but it should take around 2 minutes per waffle)
  4. Remove your waffle and repeat
  5. Enjoy with syrup, topping of choice or side
