- 1½-2 lbs cucumbers, sliced into ¼ inch rounds (a mix of English cucumbers, cocktail cucumbers, and garden cucumbers)
- 1 shallot peeled and minced
- ½ cup fresh mint — chopped
- ½ cup fresh dill — chopped
- ¼ cup fresh parsley — chopped
Skyr Dressing
- 1 cup plain Skyr (Icelandic yogurt)
- ½ cup extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp garlic powder
- 2 tsp honey
- Salt and pepper to taste
- Add the sliced cucumbers, chopped herbs and minced shallot to a large mixing bowl
- In a separate bowl, mix together all the ingredients for the Skyr dressing
- Add the prepared Skyr dressing to the large bowl and toss well together
- If you want to add something extra crunchy, you can pan roast some pecans. In a skillet over medium heat, heat pecans until browned, stirring occasionally, about 2 to 5 minutes. Just before you turn off the heat, add two tablespoons of honey over the nuts and mix well. Add to the salad.Serve cold and enjoy!
